Sour bier is een bier dat gemaakt wordt met spontane vergisting. Wilde Gisten zorgen hiervoor. Ze worden vaak op vat gelagerd en hebben een heel kenmerkende zurige, bittere en soms zelfs hartige smaak.
Geuze bier wordt 'gestoken' met oude en nieuwe lambiek. Deze Belgische biersoort is spontaan gistend en daarom een bijzondere in s'n soort. De smaak is friszurig en weinig bitter. Een commerciële geuze kan zoet zijn, maar een echte oude geuze is dat juist niet.
